Method
 

  1. Begin by seasoning the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium heat. Once hot, add the seasoned chicken breasts and sear for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the bottom of the skillet.
  5. Stir in the coconut cream, Dijon mustard, apple cider vinegar, and dried thyme. Mix well until the sauce is creamy and evenly combined.
  6. Return the chicken breasts to the skillet, spooning the sauce over the top. Allow everything to simmer together for an additional 5 minutes to absorb the flavors.
  7. Remove from heat and garnish with fresh parsley before serving.

Notes

Storage & Reheating:
Leftover creamy mustard chicken can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm it in a skillet over low heat until heated through, adding a splash of chicken broth if needed to loosen the sauce.
