- Rinse the dried white beans under cold water and place them in a large mixing bowl. Cover with water and let them soak for at least 8 hours or overnight.
- After soaking, drain the beans using a colander and set aside.
- In a large saucepan, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, cooking until they become fragrant and translucent, about 3-4 minutes.
- Add the drained beans to the saucepan, along with the chicken broth, bay leaf, fresh thyme, and the piece of parmesan rind. Bring to a boil over high heat.
- Once boiling, reduce the heat to low and cover the saucepan. Allow the beans to simmer gently for about 1.5 to 2 hours, or until they are tender.
- Stir occasionally, checking the beans for doneness. If needed, add more chicken broth or water to keep the beans submerged.
- Once the beans are tender, remove the bay leaf and thyme sprig. Stir in the fresh lemon juice, and season with salt and black pepper to taste.
- Serve the creamy white beans in bowls, garnished with freshly grated parmesan cheese.
