Method
 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the zucchinis into thin strips, about 1/4 inch thick, resembling fries. Place them on a clean kitchen towel to remove excess moisture.
  3. In a mixing bowl, whisk together the eggs until well beaten. In another bowl, combine the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  4. Dip each zucchini strip into the egg mixture, allowing any excess to drip off, then coat it in the almond flour mixture, pressing lightly to ensure the coating sticks.
  5. Place the coated zucchini fries on the prepared baking sheet in a single layer, making sure they do not touch each other.
  6. Lightly spray the tops of the fries with cooking spray or drizzle with a little olive oil to help them crisp up.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
