Method
 

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with non-stick spray.
  2. In a mixing bowl, combine the ground beef, almond flour, grated Parmesan cheese, egg, minced onion, garlic, Italian herbs, salt, and black pepper. Mix until just combined.
  3. Divide the meat mixture evenly among the muffin cups, filling each about 3/4 full.
  4. In a small bowl, mix together the low-carb ketchup and Worcestershire sauce. Spoon a dollop of this mixture on top of each meatloaf mini.
  5. Bake in the preheated oven for 25-30 minutes or until the meatloaf minis are cooked through and the internal temperature reaches 160°F (71°C).
  6. Remove from the oven and allow to cool for a few minutes. Garnish with fresh parsley before serving.

Notes

Storage & Reheating:
Store any leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, place in the microwave for 1-2 minutes or until heated through. They can also be reheated in the oven at 350°F for about 10 minutes.
