- In a mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until fully combined.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are fine.
- Preheat a non-stick skillet over medium heat. Lightly grease the skillet with a little butter or oil.
- Pour small amounts of batter (about 2 tablespoons) onto the skillet, forming mini pancakes. Cook for 2-3 minutes, or until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Transfer the cooked pancakes to a baking sheet and keep warm in the oven while you repeat with the remaining batter.
- Once all pancakes are cooked, take a skewer and thread one mini pancake followed by a piece of fruit, then another pancake, and alternate until the skewer is filled. Repeat with remaining pancakes and fruit.
- Serve the pancake skewers warm with maple syrup on the side for dipping.
