Delicious Mini Pancake Skewers for a Fun Brunch

Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries hulled and cut into chunks
  • 1 cup blueberries
  • 1 banana sliced
  • Maple syrup for serving

Method
 

  1. In a mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until fully combined.
  3. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are fine.
  4. Preheat a non-stick skillet over medium heat. Lightly grease the skillet with a little butter or oil.
  5. Pour small amounts of batter (about 2 tablespoons) onto the skillet, forming mini pancakes. Cook for 2-3 minutes, or until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  6. Transfer the cooked pancakes to a baking sheet and keep warm in the oven while you repeat with the remaining batter.
  7. Once all pancakes are cooked, take a skewer and thread one mini pancake followed by a piece of fruit, then another pancake, and alternate until the skewer is filled. Repeat with remaining pancakes and fruit.
  8. Serve the pancake skewers warm with maple syrup on the side for dipping.

Notes

Storage & Reheating:
Store leftover pancake skewers in an airtight container in the fridge for up to 2 days. To reheat, place them in a preheated skillet over medium heat for a few minutes or microwave for about 30 seconds until warmed through.
Variations:
- Substitute fruits with your favorites like kiwi, mango, or peaches.
- Add chocolate chips to the pancake batter for a sweet twist.
- Use whole wheat flour for a healthier option.
- Drizzle with honey or chocolate syrup instead of maple syrup.
