Method
 

  1. In a mixing bowl, combine the almond flour, xanthan gum, baking powder, and salt. Whisk together until well combined.
  2. Add the egg to the dry ingredients and mix until fully incorporated.
  3. Gradually add water to the mixture, stirring until a dough forms. If the dough is too dry, add a little more water, one tablespoon at a time.
  4. Divide the dough into 8 equal portions and roll each portion into a ball.
  5. Place a ball of dough between two pieces of parchment paper and use a rolling pin to flatten it into a circle about 6 inches in diameter. Repeat with remaining dough.
  6. Heat a skillet over medium-high heat. Once hot, carefully peel off the top layer of parchment paper from a tortilla and place it in the skillet.
  7. Cook for about 1-2 minutes until the edges begin to lift and the bottom has light golden spots. Flip the tortilla and cook for another 1-2 minutes on the other side.
  8. Remove the tortilla from the skillet and stack it on a plate. Cover with a clean towel to keep warm. Repeat with the remaining tortillas.

Notes

Storage & Reheating:
Store any leftover tortillas in an airtight container in the refrigerator for up to a week. To reheat, place in a dry skillet over low heat for 30-60 seconds on each side, or microwave for 10-15 seconds.
