Equipment
Method
- In a mixing bowl, combine the almond flour, xanthan gum, baking powder, and salt. Whisk together until well combined.
- Add the egg to the dry ingredients and mix until fully incorporated.
- Gradually add water to the mixture, stirring until a dough forms. If the dough is too dry, add a little more water, one tablespoon at a time.
- Divide the dough into 8 equal portions and roll each portion into a ball.
- Place a ball of dough between two pieces of parchment paper and use a rolling pin to flatten it into a circle about 6 inches in diameter. Repeat with remaining dough.
- Heat a skillet over medium-high heat. Once hot, carefully peel off the top layer of parchment paper from a tortilla and place it in the skillet.
- Cook for about 1-2 minutes until the edges begin to lift and the bottom has light golden spots. Flip the tortilla and cook for another 1-2 minutes on the other side.
- Remove the tortilla from the skillet and stack it on a plate. Cover with a clean towel to keep warm. Repeat with the remaining tortillas.
Notes
Storage & Reheating:
Store any leftover tortillas in an airtight container in the refrigerator for up to a week. To reheat, place in a dry skillet over low heat for 30-60 seconds on each side, or microwave for 10-15 seconds. Variations:
- Add spices like paprika or cumin to the dough for extra flavor.
- Use a mix of almond flour and coconut flour for a different texture.
- Experiment with different seasonings to create flavored tortillas.
