  • 2 cups cooked chicken shredded
  • 8 ounces cream cheese softened
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup diced jalapeños fresh or pickled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth and creamy.
  3. Stir in the shredded chicken, half of the shredded cheddar cheese, diced jalapeños, and chopped green onions into the cream cheese mixture. Mix well until all ingredients are evenly incorporated.
  4. Spread the chicken mixture evenly into the prepared baking dish.
  5. Sprinkle the remaining shredded cheddar cheese over the top of the casserole. If using, add the crumbled chicken bacon on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese has melted and turned golden brown.
