Equipment

  • 1 Mixing bowl
  • 1 Grill or grill pan
  • 1 Meat mallet or rolling pin
  • 1 Cutting board
  • 1 Sharp knife
  • 1 Zester or grater
  • 1 Serving platter

Method

  1. Begin by flattening the chicken breasts to an even thickness using a meat mallet or rolling pin. This ensures even cooking.
  2. In a mixing bowl, whisk together olive oil, lime juice, lime zest, minced garlic, cumin, paprika, salt, and pepper to create the marinade.
  3. Place the chicken breasts in the marinade, coating them thoroughly. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  4. Preheat your grill or grill pan over medium-high heat. Once hot, remove the chicken from the marinade and discard any leftover marinade.
  5. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
  6. While the chicken is grilling, prepare the avocado topping. In a bowl, combine the halved avocados, cherry tomatoes, and chopped cilantro. Gently toss to mix all ingredients.
  7. Once the chicken is grilled to perfection, remove it from the heat and let it rest for a few minutes before slicing.
  8. Serve the grilled chicken on a platter, topped with the avocado and tomato mixture. Enjoy your fresh and zesty grilled avocado chicken!

Notes

Storage & Reheating:
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm in a skillet over medium heat until heated through, or in the microwave until hot.
Variations:
- Add diced red onion to the avocado topping for extra crunch.
- Substitute chicken breasts with chicken thighs for a juicier option.
- Try adding jalapeños for a spicy kick.
- Use lime crema instead of plain avocado for a creamy finish.
